Bold, garlicky and sweet-spicy, with a rounded, savoury heat.

This was one of the first Asian condiments I ever made. Based on a traditional recipe found on tables across Singapore, it is gently sweet, garlicky, and has just enough chilli to give it warmth without overwhelming the palate. Subtle yet deeply satisfying, it is one of my favourite everyday sauces. I often think of it as a grown-up alternative to ketchup—more complex, more interesting, and incredibly versatile. It works beautifully as a dipping sauce, alongside grilled foods, in sandwiches, or simply wherever you might otherwise reach for a bottle of ketchup.
