Hot, sour and citrusy, with habanero fire balanced by lime and a hint of umami.

Thai Nam Jim is my name for a sauce known simply as seafood sauce in Thailand. Thais travel with it and use it traditionally to accompany seafood or as a spicy condiment.

At its heart are the classic flavours that define Thai cuisine: sweetness from jaggery, heat from Thai chillies, the bright acidity of lime juice, savoury depth from vegetable stock, and the unmistakable fragrance of garlic and coriander roots. We don’t use fish sauce, making our version completely vegetarian.

I think it’s a fabulous umami bomb that can go with almost anything. Use it as a salad dressing, drizzle it over vegetables, stir it through noodles or rice, or serve it alongside seafood, chicken or tofu. A spoonful instantly brings that inimitable Thai flavour to whatever you’re cooking.
